SCRAMBLED TOFU





Serving Suggestions: 
Perfect for breakfast with toast and fresh basil 




Ingredients
  • 500g firm tofu grated 
  • A mix of chopped vegetables: one tomato, 1 zucchini, 1 red onion, 1/2 red bell pepper, 3 cloves of garlic (grated) 

For the marinade
  • 3 Tbsp olive oil 
  • 1 Tbsp tamari
  • 1 Tbsp balsamic vinegar 
  • 1 Tbsp sesame oil 
  • 1 inch fresh ginger, grated 
  • Spices: 1 tsp cumin, 1 tsp tumeric, 1 tsp garam masala, 1 tsp sweet paprika, 1 tsp cayenne pepper 
  • Dried herbs: 1 Tbsp oregano & thyme 
  • 2 Tbsp sesame seeds 

Instructions
Prepare the marinade by mixing all the ingredients, toss in the grated tofu and let sit in the fridge for at least 30 minutes. 

Heat olive oil in a skillet and gently fry the chopped onion and the grated garlic. Add the chopped vegetables and cook them for 10 mins or until the water evaporates. Toss in the marinated tofu, mix and cook for another 10 mins, covered. Feel free to add more olive or sesame oil so it does not stick to the bottom of the pan. Once cooked, add salt and freshly ground black pepper to taste. Serve with toast and fresh basil leaves.
