WHITE BEAN DIP WITH SPICY ORANGE SAUCE
Serving Suggestion:
Perfect on top of toast or crackers, with cheese, tomato and cucumber
Ingredients
Bean Paste:
- 5-6 cups white beans (soaked overnight and boiled)
- 1 cup cashew nuts (oven toasted)
- 2 cups water (for more flavour, use the cooking water from a vegetable, e.g pumpkin)
- 5 garlic cloves
- 2 Tbsp ground flaxseed
- 2-3 Tbsp EVOO
- 1/2 lemon juice
- Spices: 1 tsp cumin (ground), 1 tsp garam masala
Spicy Orange Sauce:
- Grated zest from 1 orange
- 1 tsp cayenne pepper (ground)
- Juice from 1/2 orange
- 1-2 tsp coriander (ground)
Instructions
The bean paste:
Add all ingredients (expect water) to a high-speed blender and process. Add only 2 Tbsp EVOO and 1 cup of water. Gradually add more of each until you reach the desired consistency. Add salt to taste.
For the spicy orange sauce:
Process all ingredients in a blender until you have a smooth paste. Ladle on top of the bean paste and serve or toast or crackers of choice.
