WHITE BEAN DIP WITH SPICY ORANGE SAUCE




Serving Suggestion: 
Perfect on top of toast or crackers, with cheese, tomato and cucumber 




Ingredients

Bean Paste: 
  • 5-6 cups white beans (soaked overnight and boiled) 
  • 1 cup cashew nuts (oven toasted) 
  • 2 cups water (for more flavour, use the cooking water from a vegetable, e.g pumpkin)
  • 5 garlic cloves 
  • 2 Tbsp ground flaxseed
  • 2-3 Tbsp EVOO
  • 1/2 lemon juice 
  • Spices: 1 tsp cumin (ground), 1 tsp garam masala 

Spicy Orange Sauce: 

  • Grated zest from 1 orange
  • 1 tsp cayenne pepper (ground) 
  • Juice from 1/2 orange 
  • 1-2 tsp coriander (ground) 


Instructions
The bean paste:
Add all ingredients (expect water) to a high-speed blender and process. Add only 2 Tbsp EVOO and 1 cup of water. Gradually add more of each until you reach the desired consistency. Add salt to taste. 

For the spicy orange sauce:
Process all ingredients in a blender until you have a smooth paste. Ladle on top of the bean paste and serve or toast or crackers of choice.
