Mediterranean Chickpeas

 
Ingredients

1 head of garlic, unpeeled
1 tablespoon extra virgin olive oil
1 pinch freshly cracked black pepper and one 1 pinch of sea salt
3 spring onions, thinly sliced
1 sweet red bell pepper,cut into strips
1 red chili pepper, chopped finely
½ tsp cumin
8 tomatoes, blended
pinch of brown sugar
300g chick peas soaked overnight and cooked in pressure cooker
juice of half a lemon



Method



1. Slice the top off of the head of garlic.

2. Drizzle the olive oil and black pepper into a saucepan.

3. In the saucepan heat the olive oil over a medium heat. Add the peppers and spring onions into the pan, stir and coat with sea salt and cumin. Pour in the blended tomatoes, brown sugar, head of garlic, more sea salt sea salt and freshly cracked pepper. Let the mixture simmer for 20 minutes.

4. Add the cooked chick peas and lemon juice to the mixture then stir until heated through.
