Green Apple and Celery Salad with Mustard Vinagarette

Ingredients:
    • Juice of one fresh lemon
    • 1 tablespoon Dijon mustard
    • 2 teaspoons honey
    • 2-3 tablespoons extra virgin olive oil
    • 3-4 celery sticks with leaves
    • 2 large apples, chopped
    • 1/4 cup mixed seeds (sunflower, pumpkin and sesame)
  1. Method: 
  2. 1. Whisk the first 4 ingredients in small bowl. Season the vinaigrette with rock salt and pepper.
  3. 2. Trim  the celery leaves and chop. Thinly slice the stalks diagonally. Place the celery pieces in a bowl of cold water.
  4. 3. Drain the celery and pat dry with a kitchen towel. Combine the celery, celery leaves, apples and seeds in large bowl. Add the vinaigrette and toss. Season salad again to taste with rock salt and pepper.
