Chana Masala

 
Ingredients
  • 4 medium sweet potatoes, rinsed and scrubbed
  • 1 1/2 tablespoons coconut oil
  • 1 medium onion, diced
  • 2 cloves garlic,chopped
  • 2-3 teaspoons chopped fresh ginger
  • 1-2 tablespoons garam masala
  • Rock salt and pepper to taste
  • 6 to 7 chopped tomatoes
  • 2 cups cooked chickpeas
  • 1 cup coconut milk
  • 1 small bunch fresh coriander, chopped
Instructions
  1. Boil the sweet potatoes for around an hour until they are soft.
  2. While the sweet potatoes cook, add the coconut oil to a large pan over medium to high heat. Stir in the onions and cook until they begin to soften, for about 5 minutes. Add the garlic, ginger, garam masala, rock salt and pepper. Cook for about 1 more minute, stirring often. Add the chopped tomatoes and chickpeas. Bring to a boil, then reduce the heat and simmer for 25-30 minutes, stirring occasionally. Pour in the coconut milk and continue to simmer for 5 more minutes. Taste and add more garam masala, rock salt or pepper if needed.
  3. To serve, slice open the sweet potatoes and scoop a large portion of the chana masala into each. Garnish the potatoes with the chopped fresh coriander.
